Cheesy Dumpling Lasagna Casserole — lasagna met dumplings and booked a cozy night in.
Ingredients
- 24 frozen chicken dumplings, halal or vegetarian
- 1 lb ground chicken
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes, optional
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
Set Instant Pot to sauté mode
Heat oil, cook onion until translucent
Add garlic, cook one minute
Add ground chicken, brown and crumble
Stir in marinara and dried herbs
Season with salt, pepper, red flakes
Mix ricotta, egg, and Parmesan in bowl
Spoon a thin sauce layer into pot
Arrange a layer of dumplings evenly
Dollop ricotta mixture over dumplings
Sprinkle mozzarella over the ricotta
Repeat layers, finish with cheese on top
Seal lid, pressure cook on HIGH 10 minutes
Let natural release ten minutes then quick release
Optional: broil briefly to brown cheese
Garnish with parsley and serve hot
