Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1 lb fresh sushi-grade tuna, diced
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha
- 1 avocado, sliced
- 1/4 cup green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 4 sheets nori, cut into strips
- Sesame seeds for garnish
- Salt to taste
- Vegetable oil for frying
Instructions
Rinse the sushi rice under cold water until the water runs clear.
Combine the rice and water in a pot, bring it to a boil, then reduce to low and cover. Cook for 20 minutes, then let it sit off the heat for 10 minutes.
In a bowl, mix the diced tuna, mayonnaise, sriracha, and a pinch of salt. Adjust the heat by adding more sriracha if desired.
Once the rice is cooked, let it cool slightly before shaping it into rice cakes (about the size of a small burger).
In a non-stick frying pan, heat a few tablespoons of vegetable oil over medium-high heat. Fry the rice cakes until they are golden and crispy on both sides, about 3 minutes per side.
In a small bowl, mix the soy sauce and sesame oil.
To serve, place the crispy rice cake in a bowl, top with the spicy tuna mixture, sliced avocado, and garnish with green onions, nori strips, sesame seeds, and a drizzle of the soy-sesame sauce.
