Ingredients
- 2 lbs oxtail
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 sticks celery, diced
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 4 cups beef broth
- 2 bay leaves
- 1 teaspoon thyme
- Salt and black pepper to taste
- 1 tablespoon Worcestershire sauce
- 2 cups mashed potatoes
- Steamed green beans for serving
Instructions
Heat the vegetable oil in a large pot over medium-high heat.
Season the oxtails with salt and pepper, then brown them in batches on all sides, about 5-7 minutes per side. Remove and set aside.
In the same pot, add the onion, carrots, and celery, cooking until softened, about 5 minutes.
Add the garlic and tomato paste, cooking for another minute until fragrant.
Return the oxtails to the pot, then pour in the beef broth, bay leaves, and thyme.
Bring to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, until the meat is tender and falls off the bone.
Stir in the Worcestershire sauce towards the end of cooking.
Serve the oxtail over a bed of mashed potatoes and garnish with green beans.
