Ingredients
- 4 catfish fillets
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup diced tomatoes
- 1 cup cooked pasta (fettucine or penne)
- 2 cups chicken or vegetable broth
- 1 teaspoon Cajun seasoning
- 2 cups fresh green beans, trimmed
- 1 tablespoon butter
- 1 cup all-purpose flour
- 1/4 cup honey
- 1/2 cup cold butter, cubed
- 1/4 teaspoon salt
- 1/4 cup milk
Instructions
In a bowl, season the catfish fillets with paprika, garlic powder, salt, and pepper.
Heat olive oil in a skillet over medium-high heat. Add catfish and sear for 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and keep warm.
In the same skillet, add diced bell peppers and onions. Sauté until softened, about 3-4 minutes.
Stir in diced tomatoes and cooked pasta. Pour in the broth and Cajun seasoning, stirring to combine. Let it simmer for 5-6 minutes until heated through.
Meanwhile, steam the green beans until bright green and tender, about 4-5 minutes. Toss with butter, salt, and pepper.
For the honey butter croissants, in a bowl, mix flour, salt, and cold butter until crumbly. Gradually add milk until a dough forms. Roll out and cut into triangles, then roll up into croissants. Bake at 200°C (400°F) for 15 minutes.
Drizzle the honey over the croissants before serving.
Plate the catfish alongside the pastalaya and green beans. Serve warm with honey butter croissants.
