Ingredients
- 4 racks of baby back ribs
- 2 tablespoons smoked paprika
- 2 tablespoons brown sugar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- Salt and pepper to taste
- 1 cup barbecue sauce
- 2 cans of kidney beans
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 2 cups cooked macaroni
- 1 cup mayonnaise
- 1 cup diced ham
- 1 cup crushed pineapple
- 4 boiled eggs, diced
- 2 cups diced cooked potatoes
- Salt and pepper to taste
- 12 mini hotdogs
- Buns (optional)
Instructions
Preheat your smoker to 225Β°F (107Β°C).
Mix smoked paprika, brown sugar, garlic powder, onion powder, salt, and pepper, then rub the mixture on the ribs.
Place the ribs in the smoker and cook for about 3 hours, brushing with barbecue sauce in the last 30 minutes.
While the ribs are smoking, prepare the cowboy beans by combining kidney beans, diced bell peppers, diced onions, cumin, and chili powder in a pot. Simmer for 30 minutes.
For the Hawaiian mac salad, mix cooked macaroni, mayonnaise, diced ham, and crushed pineapple in a bowl. Chill until serving.
Combine boiled eggs and diced potatoes in a separate bowl. Mix with mayonnaise, salt, and pepper, then chill.
For a fun addition, grill the mini hotdogs for about 10 minutes until heated through, then serve in buns if desired.
