Air Fryer Mini Jalapeno Popper Egg Rolls

Ingredients
- 12 egg roll wrappers
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 6 jalapeño peppers, seeded and diced
- 4 slices beef bacon, cooked and crumbled
- ¼ cup green onions, chopped
- 1 tsp garlic powder
- ½ tsp onion powder
- ¼ tsp salt
- ¼ tsp black pepper
- 1 egg, beaten for sealing
- Cooking spray
Instructions
In mixing bowl, combine softened cream cheese, cheddar cheese, diced jalapeños, crumbled bacon, green onions, garlic powder, onion powder, salt and pepper until well mixed
Lay one egg roll wrapper on clean surface in diamond shape with corner pointing toward you
Place 2 tablespoons of filling in center of wrapper
Brush edges of wrapper with beaten egg
Fold bottom corner up over filling, then fold in left and right corners
Roll tightly toward top corner, sealing with egg wash
Repeat with remaining wrappers and filling
Place assembled egg rolls on parchment-lined baking sheet seam side down
Preheat air fryer to 375°F for 3 minutes
Lightly spray air fryer basket with cooking spray
Arrange egg rolls in single layer in basket not touching, spray tops generously with oil
Cook at 375°F for 6 minutes, then carefully flip each egg roll
Spray flipped side with oil and cook additional 6 minutes until golden brown and crispy
Let cool 3 minutes before serving to prevent cheese from being too hot
