Shrimp and Sausage Stir Fried Ramen with a Chili Oil Fried Egg

Ingredients
- 300g ramen noodles
- 200g shrimp, peeled and deveined
- 200g smoked chicken sausage, sliced
- 3 tablespoons vegetable oil
- 2 garlic cloves, minced
- 1 tablespoon ginger, minced
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 2 green onions, sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon chili oil
- 4 eggs
- Salt and pepper to taste
Instructions
Cook ramen noodles according to package instructions. Drain and set aside.
In a large pan or wok, heat 2 tablespoons of vegetable oil over medium heat.
Add garlic and ginger, sauté for 1 minute until fragrant.
Stir in the sliced sausage and cook until slightly browned.
Add bell pepper and carrot to the pan, cooking for an additional 3-4 minutes.
Add shrimp to the pan, cooking until they turn pink, about 3 minutes.
Stir in cooked ramen noodles, soy sauce, oyster sauce, and chili oil. Toss everything together until well combined.
In a separate pan, heat the remaining vegetable oil over medium heat.
Fry each egg, sunny side up, until the whites are set and the yolks are runny. Carefully drizzle some chili oil over the eggs while frying.
Serve the ramen stir-fry in bowls, topped with a chili oil fried egg and garnished with sliced green onions.
