Instructions
In a skillet, heat olive oil over medium heat. Add diced onion and bell pepper, sautéing until soft, about 3-4 minutes.
Stir in the corn and taco seasoning, cooking for an additional 2 minutes. Season with salt and pepper to taste. Remove from heat.
Heat a separate non-stick skillet over medium heat. Place one tortilla in the skillet.
Sprinkle 1/2 cup of cheese on one half of the tortilla. Add a quarter of the vegetable mixture over the cheese, then fold the tortilla in half.
Cook until the bottom is golden brown, about 2-3 minutes, then flip carefully and cook the other side until golden and cheese melts, about another 2-3 minutes.
Repeat with the remaining tortillas and filling.
