Delicious California Roll Sushi Recipe with Cucumber and Avocado

Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1/3 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 sheets nori (seaweed)
- 1 cucumber, julienned
- 1 avocado, sliced
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions
Rinse the sushi rice under cold water until the water runs clear. Drain well.
Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. If you don't have a rice cooker, you can cook it in a pot on the stove.
In a small saucepan, heat vinegar, sugar, and salt over low heat until dissolved. Mix this with the cooked rice once it's done and let it cool.
Lay a sheet of nori on a bamboo sushi mat, shiny side down. With wet hands, spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
Arrange a line of cucumber and avocado slices in the center of the rice.
Lift the mat and roll the sushi away from you, tucking in the filling tightly as you go. Wet the edge of the nori to seal the roll.
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth after each cut to avoid sticking.
Serve with soy sauce, pickled ginger, and wasabi.
