Ingredients
- 2 large sweet potatoes, diced
- 1 cup quinoa, rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 2 cups vegetable broth
- 3 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
Preheat oven to 400°F (200°C).
Toss sweet potatoes with olive oil, paprika, cumin, salt, and pepper.
Spread sweet potatoes on a baking sheet.
Roast in the oven for 30-35 minutes.
In a pot, bring vegetable broth to a boil.
Add quinoa, reduce heat, cover, and simmer for 15 minutes.
In a bowl, combine roasted vegetables and cooked quinoa.
