Ingredients
- 2 medium-sized steaks (sirloin or ribeye)
- 4 eggs
- 2 tablespoons of crispy chili oil
- 2 slices of sourdough bread
- 1 ripe avocado
- Salt and pepper to taste
- Fresh herbs (like coriander or parsley) for garnish
Instructions
1. Start by cooking the steaks. Season them with salt and pepper. Heat a skillet over medium-high heat and cook the steaks for about 4-5 minutes per side, or until they reach your desired doneness. Remove from heat and let rest.
2. In the same skillet, reduce the heat to medium. Add a little of the crispy chili oil, then crack the eggs into the pan. Cook until the whites are set and the yolks are still runny, or to your preference. Season the eggs with a pinch of salt and pepper.
3. While the eggs are cooking, toast the slices of sourdough bread until golden brown.
4. Mash the ripe avocado in a bowl and season it with salt and pepper. Spread the mashed avocado generously on the toasted sourdough slices.
5. To assemble, slice the rested steaks and place the slices on top of the avocado toast. Carefully add the crispy chili oil fried eggs on top of the steak.
6. Drizzle a bit more crispy chili oil over the eggs for an extra kick, and garnish with fresh herbs.
7. Serve immediately and enjoy!
