Ingredients
- 1 1/2 lbs boneless chicken thighs cubed
- 1 tbsp olive oil
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- 2 cups long grain white rice rinsed
- 2 1/2 cups low sodium chicken broth
- 1 cup frozen peas thawed
- 2 tbsp unsalted butter
- 1/4 cup chopped fresh parsley
- 1 tbsp lemon juice optional
Instructions
Pat chicken dry and season with salt and pepper
Set Instant Pot to SAUTE and heat oil
Brown chicken briefly in two batches
Remove chicken and saute onion until translucent
Add garlic, paprika, and thyme, stir one minute
Deglaze pot with chicken broth scraping bits
Stir in rice then nestle chicken on top
Seal lid and pressure cook on HIGH 8 minutes
Allow natural release for 10 minutes then quick release
Stir in butter and peas, fluff rice gently
Finish with lemon juice and parsley
Serve warm and enjoy
