Ingredients
- 1 lb Italian chicken sausage, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 large potato, diced
- 2 cups kale, chopped
- 1 cup heavy cream or coconut cream
- Salt and pepper to taste
- 1 teaspoon red pepper flakes (optional)
- Grated Parmesan cheese for serving
Instructions
In a skillet, brown the sausage on medium heat.
Add onions and garlic; sauté until softened.
Transfer sausage mix to the slow cooker.
Add broth, potatoes, and red pepper flakes.
Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
Stir in the kale and heavy cream before serving.
Season with salt and pepper; serve hot.
Garnish with Parmesan cheese.
