- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 tsp ground cinnamon
Instructions
Preheat oven to 350°F.
In a large mixing bowl, combine grated carrots and crushed pineapple.
In another bowl, whisk together flour, sugar, baking soda, baking powder, salt, and cinnamon.
Add dry ingredients to the carrot mixture, stir well.
Add vegetable oil and eggs, mix until combined.
Fold in nuts if using.
Pour batter into greased cake pan.
Bake for 35-40 minutes until golden brown.
Cool in the pan for 10 minutes, then transfer to rack to cool completely.
