Ingredients
- 4 cups chopped broccoli florets

- 4 cups vegetable broth
- 1 cup milk or cream

- 1 teaspoon dried thyme
- 1 tablespoon olive oil

Instructions
Heat olive oil in a pan. Sauté onion and garlic.
Add sautéed onion and garlic to slow cooker.
Mix in broccoli, potatoes, and thyme.
Pour vegetable broth over ingredients.
Cover and cook on LOW for 4-5 hours.
Blend soup until smooth using an immersion blender.
Stir in milk or cream and season with salt and pepper.
Top with cheese if desired, and serve hot.
