Ingredients
- 1 lb flank steak, cut into strips
- 1 can black beans, drained and rinsed
- 1 cup corn kernels, fresh or frozen
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 2 cups cooked rice
- 1 cup salsa
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup shredded cheese
- Sour cream for serving
- Chopped cilantro for garnish
Instructions
Place steak in slow cooker with spices.
Add beans, corn, peppers, and onion.
