Hearty Chicken Tortilla Soup (Crockpot)

Ingredients
- 2 lbs boneless skinless chicken breasts
- 2 (14.5 oz) cans diced tomatoes
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen corn
- 1 onion, diced
- 2 bell peppers, chopped
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- 6 cups chicken broth
- 2 tablespoons lime juice
- Salt and pepper to taste
- Tortilla strips for garnish
- Optional toppings: avocado, shredded cheese, sour cream, cilantro
Instructions
Place chicken breasts in the bottom of the crockpot
Add diced tomatoes, black beans, corn, onion, bell peppers, and garlic
Sprinkle chili powder, cumin, paprika, salt, and pepper over the ingredients
Pour chicken broth over everything
Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours
Remove chicken breasts and shred with two forks
Return shredded chicken to the crockpot
Stir in lime juice
Let soup sit for 10 minutes to allow flavors to meld
Serve hot topped with tortilla strips and optional garnishes
