Ingredients
- 3 lbs beef chuck roast, cut into chunks
- 1 onion, diced
- 4 cloves garlic, minced
- 1 orange, juiced
- 1 lime, juiced
- 2 tsp chili powder
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- 1 tsp black pepper
- 2 cups beef broth
- 1 bay leaf
- 1 tbsp olive oil
Instructions
Heat olive oil in a skillet over medium heat.
Sear beef chunks until browned, about 5 minutes.
Transfer beef to slow cooker and add onion, garlic.
Mix orange juice, lime juice, and spices in a bowl.
Pour mixture over beef and add broth and bay leaf.
Cover and cook on LOW for 6-8 hours until tender.
Shred meat with two forks before serving.
