Ingredients
- 12 oz lasagna noodles, broken into pieces
- 1 lb ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
Brown the ground meat in a skillet, drain fat
Add onions and garlic; sauté until soft
Transfer to slow cooker; stir in tomatoes and broth
Add lasagna noodles and seasonings; mix well
Cook on LOW for 6 hours or HIGH for 3 hours
In a bowl, mix ricotta, mozzarella, and Parmesan
Stir cheese mixture into the soup just before serving
Garnish with fresh basil before serving
