Ingrédients

  • 1 lb beef stew meat cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 6 cups beef broth
  • 1 cup diced tomatoes canned or fresh
  • 1 cup potatoes diced
  • 1 cup green beans chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 cup frozen peas added at the end

Instructions

Brown the Beef

  • Heat olive oil in a large pot over medium heat.
  • Add beef stew meat and sear for 3-4 minutes until browned on all sides.
  • Remove beef from the pot and set aside.

Cook the Vegetables

  • In the same pot, add onions, carrots, and celery. Sauté for 5 minutes until softened.
  • Add minced garlic and cook for another 1 minute until fragrant.

Make the Soup

  • Pour in beef broth and add diced tomatoes, potatoes, and green beans.
  • Return the browned beef to the pot and season with oregano, basil, salt, and black pepper.
  • Bring to a boil, then reduce heat and let simmer for 30 minutes.
  • Stir in frozen peas and cook for an additional 5 minutes.

Serve

  • Ladle into bowls and serve hot. Enjoy!
