Equipment

Ingrédients

  • 2 cups mixed dried fruits such as raisins, currants, and chopped dates
  • 1/2 cup chopped nuts such as walnuts or pecans
  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 3 eggs room temperature
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup orange juice for moisture and flavor

Instructions

Prepare the Ingredients

  • Preheat the oven to 325°F (160°C) and line a cake tin with parchment paper.
  • In a bowl, mix dried fruits and nuts. Set aside.

Make the Batter

  • In a mixing bowl, cream butter and brown sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with orange juice.
  • Fold in the dried fruit and nut mixture until evenly distributed.

Bake the Cake

  • Pour batter into the prepared cake tin and smooth the top.
  • Bake for 1 hour and 45 minutes or until a toothpick inserted comes out clean.
  • Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Aging (Optional)

  • Wrap the cooled cake in parchment paper and store in an airtight container for up to a week to enhance flavors.
