Ingrédients

  • 1 cup green beans trimmed and blanched
  • 1 cup kidney beans drained and rinsed
  • 1 cup chickpeas drained and rinsed
  • 1/2 cup red onion thinly sliced
  • 1/4 cup parsley chopped
  • 1/4 cup olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup for vegan option
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

Prepare the Ingredients

  • Trim the green beans and blanch them in boiling water for 2 minutes, then transfer to an ice bath to stop cooking.
  • Drain and rinse the kidney beans and chickpeas.
  • Thinly slice the red onion and chop the parsley.

Make the Dressing

  • In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper.

Assemble the Salad

  • In a large mixing bowl, combine green beans, kidney beans, chickpeas, red onion, and parsley.
  • Pour the dressing over the salad and toss to coat evenly.

Marinate and Serve

  • Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  • Serve chilled and enjoy!
