Ingrédients

  • 1 cup white rice uncooked
  • 2 cups water for cooking rice
  • 1 lb ground chicken or turkey
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil for cooking
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt to taste
  • 1/2 tsp black pepper
  • 1 cup tomato sauce
  • 1 cup shredded lettuce for topping
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1 tomato diced, for garnish
  • 1/4 cup fresh cilantro chopped, for garnish

Instructions

Cook the Rice

  • In a medium pot, bring water to a boil. Add the rice, reduce heat to low, cover, and cook for 15 minutes or until tender. Remove from heat and let sit covered.

Prepare the Taco Meat

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and garlic, sautĂ© for 3 minutes until fragrant.
  • Add the ground chicken and cook until browned, breaking it up with a spoon.
  • Stir in cumin, chili powder, paprika, salt, and black pepper. Mix well.
  • Pour in the tomato sauce and simmer for 5 minutes.

Assemble the Taco Rice

  • Fluff the cooked rice and divide it into serving bowls.
  • Spoon the seasoned taco meat over the rice.
  • Top with shredded lettuce, cheese, diced tomatoes, and fresh cilantro.

Serve

  • Serve immediately and enjoy!
