Ingrédients

  • 1 lb ground chicken
  • 1 cup fresh spinach finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/2 cup breadcrumbs or almond flour for gluten-free
  • 1 egg beaten
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil for cooking (if pan-frying)

Instructions

Prepare the Meatball Mixture

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine ground chicken, chopped spinach, feta cheese, breadcrumbs, egg, garlic, oregano, salt, and black pepper.
  • Mix well until all ingredients are evenly incorporated.

Shape the Meatballs

  • Using your hands or a small scoop, shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.

Cook the Meatballs

  • Bake in the preheated oven for 18-20 minutes, or until the meatballs are golden brown and cooked through.
  • For a crispy finish, broil for an additional 2 minutes.

Pan-Fry Option

  • Heat olive oil in a skillet over medium heat.
  • Add meatballs and cook for 8-10 minutes, turning occasionally until browned and fully cooked.

Serve

  • Serve warm with tzatziki sauce, pita bread, or over a salad.
