Ingrédients

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 3 cups grated carrots
  • 1 cup chopped walnuts optional
  • 8 oz cream cheese softened
  • 1/2 cup butter softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

Prepare the Cake:

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  • In a separate large bowl, beat together oil, sugars, eggs, and vanilla until smooth.
  • Gradually add dry ingredients to wet mixture, stirring just until combined.
  • Fold in grated carrots and nuts (if using).
  • Pour batter into prepared pan and bake for 35–40 minutes or until a toothpick inserted comes out clean.

Make the Frosting:

  • In a bowl, beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla and beat until smooth.
  • Let cake cool completely before spreading frosting evenly on top.
