Ingrédients

  • 4 large russet potatoes peeled and cubed
  • 1 tsp salt divided
  • 1/2 tsp black pepper
  • 1 egg beaten, for coating
  • 1 cup breadcrumbs for coating
  • 1/2 cup flour for coating
  • 1 cup vegetable oil for frying
  • 1/2 cup cheese shredded, for filling
  • 1/4 cup green onions chopped, for filling

Instructions

Prepare the Mashed Potatoes

  • Boil the potatoes in salted water for about 15 minutes until fork-tender.
  • Drain and mash the potatoes in a mixing bowl. Season with salt and black pepper, then let cool.

Assemble the Papas Rellenas

  • Take a scoop of mashed potatoes and flatten it in your palm.
  • Place a small amount of shredded cheese and green onions in the center.
  • Gently fold the mashed potatoes around the filling, forming a ball.
  • Repeat with the remaining potatoes and filling.

Coat the Potato Balls

  • Roll each ball in flour, then dip into the beaten egg, and finally coat with breadcrumbs.
  • Place the coated potato balls on a plate and refrigerate for 10 minutes to firm up.

Fry the Papas Rellenas

  • Heat vegetable oil in a deep skillet to 350°F (175°C).
  • Carefully fry the potato balls in batches, turning occasionally, until golden brown, about 3-4 minutes per batch.
  • Remove with a slotted spoon and drain on paper towels.

Serve

  • Serve warm with your favorite dipping sauce.
