Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups milk dairy or non-dairy alternative
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips or berries optional

Instructions

Prepare the Batter

  • In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • Add milk, vegetable oil, and vanilla extract. Whisk until just combined. Do not overmix.
  • Fold in chocolate chips or berries if using.

Cook the Pancakes

  • Heat a non-stick skillet over medium heat and lightly grease with oil or butter.
  • Pour about 1/4 cup of batter into the skillet for each pancake.
  • Cook until bubbles form on the surface and the edges look set, about 2 minutes.
  • Flip and cook for another 1-2 minutes until golden brown.

Serve

  • Serve warm with maple syrup, fresh fruit, or your favorite toppings.
