Ingrédients

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 1 zucchini diced
  • 1 cup green beans chopped
  • 1 cup diced tomatoes canned or fresh
  • 6 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cannellini beans drained and rinsed
  • 1 cup kidney beans drained and rinsed
  • 1/4 cup fresh parsley chopped, for garnish

Instructions

Sauté the Vegetables

  • Heat olive oil in a large pot over medium heat.
  • Add onions, carrots, and celery. Sauté for 5 minutes until softened.
  • Stir in minced garlic and cook for another minute.

Build the Soup

  • Add zucchini, green beans, diced tomatoes, and vegetable broth.
  • Stir in oregano, basil, salt, and black pepper. Bring to a boil.
  • Reduce heat and let simmer for 20 minutes.

Add the Beans

  • Stir in cannellini beans and kidney beans. Simmer for another 5 minutes.

Serve

  • Remove from heat and garnish with fresh parsley.
  • Serve hot and enjoy!
