Ingrédients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs or almond flour for gluten-free option
  • 1 egg beaten
  • Zest of 1 lemon lemon zest
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh basil chopped
  • 1/2 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 tbsp olive oil for pan-frying (optional)

Instructions

Prepare the Meatball Mixture

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine ground chicken, breadcrumbs, beaten egg, lemon zest, lemon juice, minced garlic, chopped parsley, chopped basil, salt, and black pepper.
  • Mix until all ingredients are just combined; avoid overmixing to keep the meat tender.

Shape and Cook the Meatballs

  • Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  • Bake for 18-20 minutes until the meatballs are cooked through and lightly browned.
  • For a crispier exterior, you may pan-fry the baked meatballs in olive oil over medium heat for an additional 2-3 minutes per side.

Serve

  • Remove from the oven (or skillet) and serve warm with your choice of pasta, salad, or as an appetizer.
