Ingrédients

  • 4 eggs beaten
  • 1/2 cup turkey chorizo crumbled
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh cilantro chopped, for garnish
  • 2 corn tortillas optional, for serving

Instructions

Cook the Chorizo

  • Heat olive oil in a skillet over medium heat.
  • Add the crumbled turkey chorizo and cook for about 5 minutes until browned and fully cooked.

Prepare the Eggs

  • In a mixing bowl, beat the eggs with salt and black pepper.
  • Pour the beaten eggs into the skillet with the chorizo.
  • Gently scramble the eggs, stirring frequently, and cook for 3-4 minutes until soft and fully set.

Serve

  • Garnish with fresh cilantro and serve hot with corn tortillas if desired.
