Ingredients

  • 4 eggs beaten
  • 1 medium tomato diced
  • 1/4 cup white onion finely chopped
  • 1 jalapeño pepper seeded and finely chopped
  • 1 tbsp olive oil or vegetable oil
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper
  • 1/4 cup cilantro chopped, for garnish
  • 4 corn tortillas for serving

Instructions

Prepare the Ingredients

  • Dice the tomato, finely chop the onion and jalapeño, and set aside.
  • In a mixing bowl, beat the eggs with a pinch of salt and black pepper.

Cook the Vegetables

  • Heat olive oil in a skillet over medium heat.
  • Add the onion and jalapeño, and sauté for 2 minutes until softened.
  • Stir in the diced tomato and cook for another 2 minutes.

Cook the Eggs

  • Pour the beaten eggs into the skillet and let them cook for a few seconds without stirring.
  • Gently stir the eggs, folding them into the vegetable mixture until they are fully cooked but still soft.

Serve

  • Remove from heat and sprinkle with chopped cilantro.
  • Serve immediately with warm corn tortillas on the side.
