Ingrédients

  • 4 cups mixed greens such as spinach, arugula, or romaine
  • 1 large apple sliced thin (Honeycrisp or Granny Smith preferred)
  • 1/3 cup dried cranberries
  • 1/4 cup walnuts chopped and toasted
  • 1/4 cup feta cheese crumbled (optional)
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

Prepare the Ingredients

  • Slice the apple into thin slices and chop the walnuts.
  • Toast the walnuts in a dry skillet over medium heat for 2-3 minutes until lightly golden. Set aside.

Make the Dressing

  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well combined.

Assemble the Salad

  • In a large mixing bowl, combine mixed greens, sliced apples, dried cranberries, toasted walnuts, and feta cheese (if using).
  • Drizzle the dressing over the salad and toss gently to combine.

Serve
