Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cold, cut into small cubes
  • 1/2 cup dried cherries chopped if large
  • 2/3 cup heavy cream plus extra for brushing
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp coarse sugar for topping (optional)

Instructions

Prepare the Dough

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Stir in dried cherries.

Mix the Wet Ingredients

  • In a separate bowl, whisk together heavy cream, egg, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Shape and Cut the Scones

  • Transfer the dough to a lightly floured surface and gently shape it into a 1-inch thick circle.
  • Cut into 8 equal wedges and place them on the prepared baking sheet.

Bake the Scones

  • Brush the tops of the scones with extra heavy cream and sprinkle with coarse sugar if desired.
  • Bake for 16-18 minutes, or until golden brown on top.

Cool and Serve

  • Allow scones to cool for 10 minutes before serving.
