Ingredients

  • 2 cups cornmeal yellow or white
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup milk or non-dairy alternative
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted butter or coconut oil
  • 1 tbsp apple cider vinegar for extra fluffiness

Instructions

Prepare the Batter

  • Preheat the oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
  • In a mixing bowl, whisk together cornmeal, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together milk, eggs, honey, melted butter, and apple cider vinegar.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

Bake the Muffins

  • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  • Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve

  • Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
  • Serve warm with butter, honey, or your favorite spread.
