Ingredients

  • 3 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 1 cup carrots julienned
  • 1/4 cup red onion thinly sliced
  • 1/4 cup apple cider vinegar
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup for vegan option
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley chopped, optional

Instructions

Prepare the Vegetables

  • Shred the green and red cabbage and place them in a large mixing bowl.
  • Julienne the carrots and thinly slice the red onion, then add them to the bowl.

Make the Dressing

  • In a small bowl, whisk together apple cider vinegar, olive oil, Dijon mustard, honey, salt, and black pepper until well combined.

Assemble the Coleslaw

  • Pour the dressing over the vegetables and toss to coat evenly.
  • Add chopped fresh parsley if using, and mix well.

Marinate and Serve

  • Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  • Serve chilled and enjoy!
