Equipment

Ingrédients

  • 1 can chickpeas drained and rinsed
  • 1/4 cup mayonnaise or Greek yogurt
  • 1 tbsp Dijon mustard
  • 1/2 cup celery finely chopped
  • 1/4 cup red onion finely diced
  • 1 carrot grated
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 tsp salt to taste
  • 4 large whole wheat tortillas
  • 1 cup lettuce chopped
  • 1 cup tomatoes diced

Instructions

Prepare the Chickpea Salad

  • In a mixing bowl, mash the chickpeas using a fork or potato masher until mostly broken down but still slightly chunky.
  • Add mayonnaise or Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and black pepper. Stir to combine.
  • Fold in the celery, red onion, and grated carrot. Mix well.

Assemble the Wraps

  • Lay a tortilla flat and place a generous scoop of chickpea salad in the center.
  • Top with chopped lettuce and diced tomatoes.
  • Fold the sides of the tortilla inward, then roll it up tightly from the bottom.

Serve

  • Slice the wrap in half and serve immediately, or wrap tightly in foil for meal prep.
