Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs plain or panko
  • 1 egg beaten
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup buffalo sauce
  • 2 tbsp butter melted
  • 1/4 cup chopped green onions for garnish (optional)
  • 1/4 cup crumbled blue cheese for garnish (optional)

Instructions

Prepare the Meatballs

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine ground chicken, breadcrumbs, beaten egg, milk, garlic powder, onion powder, salt, and black pepper.
  • Mix well until fully combined, but do not overwork the meat.
  • Scoop out small portions and roll into meatballs, about 1 inch in diameter. Place them on the prepared baking sheet.

Bake the Meatballs

  • Bake for 18-20 minutes or until fully cooked and golden brown.

Coat with Buffalo Sauce

  • In a small saucepan over low heat, melt the butter and mix it with the buffalo sauce.
  • Remove the meatballs from the oven and toss them in the warm buffalo sauce until evenly coated.

Serve

  • Place the buffalo-coated meatballs on a serving dish and garnish with chopped green onions and crumbled blue cheese if desired.
  • Serve warm with extra buffalo sauce or a side of ranch dressing.
