Ingredients

  • 4 cups broccoli florets chopped into bite-sized pieces
  • 1/2 cup red onion finely chopped
  • 1/2 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 1/2 cup shredded cheddar cheese optional
  • 1/2 cup Greek yogurt or mayo alternative
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup for vegan option
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Prepare the Vegetables

  • Chop the broccoli into small bite-sized florets and place them in a large mixing bowl.
  • Finely chop the red onion and add it to the bowl.

Make the Dressing

  • In a small bowl, whisk together Greek yogurt, apple cider vinegar, honey, salt, and black pepper until smooth.

Assemble the Salad

  • Pour the dressing over the broccoli and toss well to coat.
  • Add dried cranberries, sunflower seeds, and shredded cheddar cheese (if using), and mix well.

Marinate and Serve

  • Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  • Serve chilled and enjoy!
