Ingrédients

  • 2 tbsp butter
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1/4 cup all-purpose flour for thickening
  • 4 cups vegetable broth or chicken broth
  • 4 cups broccoli florets chopped
  • 1 cup carrots shredded
  • 2 cups milk whole milk or half-and-half
  • 2 cups cheddar cheese shredded, sharp or mild
  • 1 tsp salt to taste
  • 1/2 tsp black pepper
  • 1/2 tsp paprika optional, for extra flavor

Instructions

Sauté the Aromatics

  • In a large pot, melt butter over medium heat.
  • Add chopped onion and sauté for 3-4 minutes until soft.
  • Stir in minced garlic and cook for another 1 minute.

Thicken the Soup

  • Sprinkle in the flour and whisk continuously for 1-2 minutes to create a roux.
  • Gradually pour in the vegetable broth, whisking to prevent lumps.

Simmer the Vegetables

  • Add the broccoli florets and shredded carrots to the pot.
  • Reduce heat and let the soup simmer for 15-20 minutes until the vegetables are tender.

Blend and Finish

  • Use an immersion blender for a smoother texture, or leave the soup chunky.
  • Stir in the milk, cheddar cheese, salt, pepper, and paprika. Mix until the cheese is fully melted.

Serve

  • Ladle into bowls and serve hot with crusty bread or crackers.
