Birria Quesadillas

Birria Quesadillas are a crispy and cheesy twist on the traditional Mexican birria tacos. These quesadillas are filled with flavorful, slow-cooked beef and melted cheese, then grilled to perfection. Serve with a side of rich consommé for dipping.

Equipment

Ingrédients

  • 2 lbs beef chuck roast cut into chunks
  • 4 cups beef broth
  • 3 dried guajillo chilies stems and seeds removed
  • 2 dried ancho chilies stems and seeds removed
  • 1 onion quartered
  • 4 cloves garlic
  • 1 tbsp cumin
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 cup tomato sauce
  • 12 corn tortillas
  • 2 cups shredded cheese Oaxaca or Monterey Jack
  • 1/4 cup chopped cilantro
  • 1/2 cup diced onions

Instructions

Prepare the Birria

  • In a large pot, add beef chuck roast, beef broth, guajillo chilies, ancho chilies, onion, and garlic. Bring to a boil, then reduce to a simmer.
  • Add cumin, oregano, paprika, black pepper, salt, and tomato sauce. Stir well.
  • Simmer for 3 hours or until the beef is tender and falls apart.
  • Remove the beef and shred it using two forks. Strain the broth to create consommé for dipping.

Assemble the Quesadillas

  • Heat a skillet or griddle over medium heat.
  • Dip a tortilla into the consommé, then place it on the skillet.
  • Add shredded beef, cheese, and a sprinkle of chopped cilantro and diced onions.
  • Fold the tortilla in half and cook for 2-3 minutes per side until crispy and golden brown.

Serve

  • Serve the quesadillas hot with a side of warm consommé for dipping.
