Equipment

Ingrédients

  • 1 cup basmati rice rinsed
  • 2 tbsp butter
  • 1 small onion finely chopped
  • 1/4 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 cups chicken or vegetable broth
  • 1/4 cup raisins
  • 1/4 cup sliced almonds toasted
  • 2 tbsp chopped fresh parsley for garnish (optional)

Instructions

Prepare the Ingredients

  • Rinse the basmati rice under cold water until the water runs clear. Drain well.
  • Toast the sliced almonds in a dry skillet over medium heat for 2-3 minutes until lightly golden. Set aside.

Cook the Rice Pilaf

  • In a saucepan, melt the butter over medium heat.
  • Add the chopped onion and cook for 2-3 minutes until softened.
  • Stir in the cinnamon and salt, then add the rinsed rice. Stir well to coat.
  • Pour in the chicken or vegetable broth and bring to a boil.
  • Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.

Finish and Serve

  • Remove from heat and let the rice sit, covered, for 5 minutes.
  • Fluff the rice with a fork and stir in the raisins and toasted almonds.
  • Garnish with chopped parsley before serving.
