Shrimp and Avocado Bowls with Mango Salsa

Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup cilantro, chopped
- Juice of 2 limes
- 1 tsp chili powder
- Salt to taste
- 1 tbsp olive oil
Instructions
In a mixing bowl, combine mango, onion, cilantro, and lime juice.
Set aside mango salsa for flavors to meld.
Heat olive oil in medium-cooker.
Add shrimp, sprinkle with chili powder and salt.
Cook shrimp for 4-5 minutes until pink.
Remove shrimp from heat and let cool.
In serving bowls, layer avocado and shrimp.
Top with mango salsa and a squeeze of lime.
