Ingredients
- 1 pound boneless, skinless chicken breasts, shredded
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Tortilla chips for serving
- 1 avocado, diced for topping
- Sour cream for topping
- Shredded cheese for topping
- Chopped cilantro for garnish
Instructions
Place chicken breasts in the slow cooker.
Add black beans, corn, and tomatoes.
Pour in chicken broth and add seasonings.
Stir to combine all ingredients well.
Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
Once cooked, shred chicken in the pot.
Serve hot with tortilla chips and toppings.
