Ingredients
- 3 lbs boneless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 cup orange juice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lime, juiced
Instructions
Season chicken with salt, pepper, cumin, and oregano.
Set Instant Pot to sauté; heat olive oil.
Add onion and garlic; sauté until fragrant.
Add chicken to the pot; brown on both sides.
Pour orange juice and lime juice over chicken.
Seal the lid and cook on HIGH pressure for 30 minutes.
Allow natural release for 10 minutes, then quick release.
Remove chicken; shred with two forks.
Return shredded chicken to the pot and mix well.
Serve with tortillas, rice, or as desired.
