Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, whisk together the eggs and milk until well combined.
Add salt, black pepper, garlic powder, and dried oregano to the egg mixture and mix well.
In a large skillet, heat olive oil over medium heat. Add onions and bell peppers, cooking until soft, about 5 minutes.
Stir in the diced ham (or sausage) and spinach, cooking for an additional 2 minutes.
Remove the skillet from heat and let it cool slightly before adding to the egg mixture.
