Instructions
In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and brown sugar.
In another bowl, mix the grated carrots, crushed pineapple, buttermilk, milk, egg, vegetable oil, and vanilla extract until well blended.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in chopped walnuts if using.
Heat a non-stick skillet or griddle over medium heat and lightly grease it.
Pour 1/4 cup of the batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
Flip and cook the other side until golden brown, about 2-3 minutes more.
Repeat with the remaining batter.
Serve warm topped with cream cheese frosting or your favorite syrup.
