Air Fryer Twice Baked Potatoes

Ingredients
- 4 medium russet potatoes
- 4 tbsp butter, softened
- ½ cup sour cream
- ½ cup whole milk
- 1 cup shredded cheddar cheese, divided
- 4 slices beef bacon, cooked and crumbled
- 3 green onions, chopped
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp paprika
- Cooking spray
Instructions
Scrub potatoes clean and pat dry thoroughly
Pierce potatoes several times with fork
Spray potatoes lightly with cooking spray and sprinkle with salt
Preheat air fryer to 400°F for 3 minutes
Place potatoes in air fryer basket
Cook at 400°F for 40 minutes until tender when pierced
Remove potatoes carefully with oven mitts and let cool 5 minutes
Cut each potato in half lengthwise
Scoop out potato flesh leaving ¼-inch shell intact
In large bowl mash potato flesh with butter sour cream and milk until creamy
Stir in ¾ cup cheese crumbled bacon half the green onions garlic salt and pepper
Spoon mixture back into potato shells mounding slightly
Top with remaining ¼ cup cheese and paprika
Return stuffed potatoes to air fryer
Cook at 400°F for 10 minutes until cheese melts and tops are golden
Garnish with remaining green onions and serve hot
